Waterberry Farms Salsa from Poplar Head Farmer's Market
8 tomatoes rough chopped and some in blender
3 cloves of garlic or to taste
3 sweet onions-small- or shallots
1 c olive oil
1/4 c balsamic
2 T fresh basil chopped
2 T fresh parsley chopped
1 t sugar if tomaotes are too acid.
Combine and let stand 1 day at rm temp.
*Serve over pasta with Italian 4 cheeses and on Waterberry Farms home grown hydroponic lettuce as a salad.
*Serve similar to above photo with goat cheese spread over toasted foccaccio bread.
Thanks to my mom-in-law Rosalyn and the Waterberry Farms lady for sharing the recipe and serving suggestions. I can't wait to try it for our dinner party this weekend.
